BUT FIRSTLY – What is the difference between cacao and cocoa ?
Cacao is raw, always processed under 50 degrees C (max), and cocoa has been roasted at high temperatures, similar to coffee process. Essentially both products start their journey off the same way, cacao pods are grown on trees.
Our ceremonial cacao is processed a little differently from this point though. A totally hands on process with little to no machinery involved. The ripe cacao pods are hand picked in the jungle, where the flesh and beans are scooped out and left to dry out a little. This is also the fermentation process. And as gross as it may sound, this is where the amazing and intense flavour magic starts to happen.
The entire process is done with PURITY, INTENTION and LOVE. This is what helps to make the cacao ceremonial grade.
Why did I chose cacao instead of cocoa to make Earth Monkey Chocolate ?
