The dried beans are stone ground, and the grinding creates a constant low heat, which helps to melt and liquify the cacao into a paste (or mass/ liquor as it is often known) to be poured into shallow tubs for setting and export. Pure Ceremonial Cacao Powder – convenient powder for precise measurement, and in a variety of applications. The cacao powder is separated off from the pure cacao block, as a kind of by product of the cacao butter extraction process, and ground into a fine couverture grade powder – similar to the cocoa powder we grew up with. However it has also been processed under 50 degrees C, to maintain its raw qualities, unlike cocoa which is roasted at high temps. By nature of its very purpose, cacao drinks should be prepared and enjoyed with intention. To get the most benefit from each cup, I urge you to literally direct your focused love, intention and gratitude into the drink as you prepare it.
For taking the drink alone I recommend a quiet place of contemplation – just a short break out from your day – to really connect with the cacao and let it help in opening your heart. For drinking in a group situation the possibilities are endless, you may wish to sit in a circle and share life experience or wisdom, or just give gratitude and sit in quiet contemplation, you may wish to connect via ceremony, meditation, dance or all 3 !
